Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil

  • 24 oz marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until fragrant (about 2-3 minutes).
  4. Add zucchini, spinach, and mushrooms to the skillet. Cook until the vegetables are tender, about 5-7 minutes. Season with salt, pepper, and oregano.
  5. Spread a layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed vegetables, a third of the mozzarella, and a layer of marinara sauce.
  7. Repeat the layers, finishing with a layer of noodles, remaining sauce, mozzarella, and Parmesan cheese on top.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
